Pancakes could (ahem, should) probably be eaten every day of the year. Full disclosure: we’ve been known to go on week-long pancake marathons! There’s no better time to feast on fluffy flapjacks than on Pancake Tuesday — also known as Mardi Gras, Shrove Tuesday or, appropriately, Fat Tuesday.
If you’re not familiar with this feast of feasts, Pancake Tuesday is the day before Lent and is the final meal before the forty day fast. Traditionally, in preparation for the fast, Pancake Tuesday was the day to consume all of the fattening ingredients in the home, which before the days of Uber Eats and Hello Fresh, was primarily eggs and milk. The easiest way to use these ingredients was to combine them with flour, and voilà — you’ve got yourself an IHOP-style stack of griddle cakes!

All recipes listed below are gluten-free and some are completely grain-free. Got your eye on a recipe that contains dairy but you’re dairy-free? Try subbing milk or cream with full fat coconut milk and butter with ghee or coconut oil. Avoiding refined sugar? Sub cane sugar with coconut sugar, and if you’re vegan, sub honey with maple syrup.
