Matcha Mint Chip Breakfast Smoothie

There's something just so quintessentially summer about mint chip ice cream. The cooling mint; the crunchy bits of chocolate. We think it's so perfectly summer that we just simply had to create our very own smoothie version. 

Chia seeds, oats, avocado, dates, banana and greens pack this smoothie with good fats, fiber and natural sweetness to keep you happy and satiated. Our Matcha-Moringa Functional Blend brings that vibrant green color, along with brain supporting, immune-balancing and energizing goodness. And finally some mint and cacao nibs or chocolate bits (or both) for that iconic texture and flavour.

The only thing missing from this smoothie is the brain freeze because it's all about the brain love. 

Ingredients

  • ¾ cup plant-based milk of choice
  • 1 tsp chia seeds
  • 2 tbsp oats
  • 1-2 drops mint extract OR 7 mint leaves (*mint extract is strong — be careful when adding!)
  • 2 tsp JOYÀ Matcha-Moringa Functional Blend
  • ½ banana
  • ¼ avocado
  • a handful spinach or kale leaves
  • 1-2 pitted dates (or other natural sweetener), to taste
  • ½ cup ice
  • optional: a scoop of plain or vanilla protein powder
  • For topping: Cacao nibs or chopped JOYÀ chocolate stirred in at the end

Instructions

  1. Add all ingredients (except toppings/mix-ins) to a high-speed blender and blend until smooth and no chunks remain.
  2. Pour into glass(es), optionally add toppings/mix-ins and enjoy!

Pro Tip: Refrigerate any leftovers for up to 24 hours. Alternatively, pour leftovers into an ice cube tray and use to make other smoothies
